It’s true. I do eat meat. In fact I think I have eaten more meat in the past week than I have eaten in months. Granted it hasn’t been very much, but I looked through my old posts and realized that these will be the first pictures with meat. Perhaps with more to come!

I traveled to the mountains of New Mexico this past week, and I soooo enjoyed the cooler weather. Heck even my stop off in Amarillo was a break from the endless over 100 degree weather in Dallas. My dear high school/ junior high/ grew up on the same street friends and I set off for New Mexico (Red River specifically) on Sunday. We cooked a lot, and sadly I forgot to take picture of our great meals, but I think I will be posting a recipe soon that I tried (chickpea patties, get excited).

5 things I love about my friends (specifically the ones I went to the mountains with)

  1. In high school we used to make movies on Friday nights. I think we considered ourselves ‘artistic’. To this day we are still looking for some lost footage of a skit called ‘dog girl’. If you have seen it let us know.
  2. We watched television while in the mountains, but we stuck specifically to shows about cake decorating (which is surprisingly not hard to do). We all perfected our Buddy the ‘cake boss’ impressions.
  3. We have known each other so long that we can always pull out and embarrassing story or memory at a moment’s notice to liven up our day. Like “remember that time you wore pleated khaki shorts with a t-shirt tucked in and then pulled out a little bit with slip on loafers”.
  4. They can beat the pants off of anyone at Harry Potter Scene It. I have personally had my pants beaten off several times.
  5. They have really great personal hygiene. I try to be more like them. They iron often as well.

My favorite part of the weekend was packing our picnic for a hike that we went on. Yes I am a nerd like that. (this reminds me of the time that I agreed to go to an all night showing of the twilight movies with some friends (Rachel, Catlin, and Carol…you can’t hide) I had never seen any of the movies, but I agreed to go out of curiosity and the social interaction. The thing I got most excited about however, was making everyone special snack bags for the 8 hour saga….) So the picnic was a great success full of fresh fruit, carrots, crackers (fyi the organic crackers at Jason’s Deli are Dr. Cracker brand!), and beautiful sandwiches complete with avocado and Turkey (thus the meat).

I had also been scheming to try and align my trip to Red River with a journey to Trader Joe’s in Santa Fe. So we woke up early Tuesday morning and headed out to the big discount organic grocery paradise. We had to stop and eat of course, and there is no better place than Santa Fe to grab some delicious food. We hit up Counter Culture (at the recommendation of my parents, professional foodies who visit Santa Fe often) a fun, eclectic, organic, hippie hang-out where I felt completely at home. I stared at the menu forever, and finally decided on a Cobb Salad (thus the second appearance of meat).

This salad was life changing. Pictures do it no justice. Get in your car today, drive to Santa Fe, and eat this salad. Ok maybe I am exaggerating a little, but it was amazing!

Overall my trip was fun and relaxing. I head out Sunday for a quick trip to Philadelphia to see my roommate from last year. Perhaps there will be a cheesesteak post in the near future…that would be a lot of meat!

No lie. I am hungry a lot. I usually control this very well by being anal and carrying around tons of great low calorie snacks and by planning my meals religiously. One key is that I usually eat a HUGE breakfast. Yesterday this did not happen. On Saturday the organization I work for hosted a 5k. It was a great success and a lot of fun. The day was crazy however, and it started around 5:00 a.m. On the way home from the race I was feeling light headed and droopy, and I think it was 100% connected to the weird unbalanced combination of food I had that morning (banana, granola bar, banana, granola bar, granola, water…..) I got home from the race and was concentrating on getting some protein and fiber, while at the same time cleaning out my fridge for vacation. I came across what I have been eating for lunch all week. While not glamorous or extremely exciting, this meal filled me up and kept me going on my long day.

Summer harvest Chili

Ingredients:

1 cup summer squash (I used my patty pan)

1 cut carrot (I did mine in rounds)

1 small onion diced

2 cloves garlic (chopped)

2 medium banana peppers (any pepper will do, just make sure it is mild)

1 tsp coconut oil

1 can kidney beans (well rinsed)

1 can black beans (well rinsed)

1 can fire-roasted tomatoes with chilies (I was using trader joe’s brand, but I think muir glen is also a good option)

½ tsp chili powder

½ tsp cinnamon

½ tsp salt

½ pepper

½ tsp cumin

Directions:

Chop up all of the vegetables and sauté them in the coconut oil until soft (around 5-7 minutes). Next add the spices, beans, and tomatoes (un-drained) and add water until it reaches a consistency you desire. Let simmer for around 20 minutes, and then enjoy!

Makes around 6 one cup servings.

The perfect summer veggie sandwich

Ingredients:

1 small bagel (I also use sandwich thins, English muffins, and plain old bread)

1 wedge laughing cow cheese (1 tbsp reduced fat cream cheese or hummus is also great!)

½ sliced tomato

Handful of spinach

A handful of sprouts

4 or 5 slices of cucumber

A dash of salt and pepper.

Directions:

Slap this together and you are in business.

The perfect lunch is born.
