Crazy night. I came up from work ready to do a quick five miles on the treadmill at the gym. I changed quickly into my workout clothes, grabbed my I-pod and water bottle and went out the door. What did I forget you ask…oh just my keys. The keys, I might add, that get me into the gym, my house, and my car.

To add to the mess I left my house at 4:45 and my first online class of the semester started at 6:00. My wonderful neighbor, thank goodness, answered her door and took pity on my. She set me up on her laptop to do my online class and then told me to go on my run. I went to run outside, and ended up doing just around 3 miles due to the heat. My neighbor greeted me at the door with a towel and let me settle in to my super exciting webinar.

After a long night of online learning (Catlin did come home and I finally got back into our apartment) I told Catlin I wanted a cookie. So I decided to go to the kitchen and put together a quick, “healthy” cookie recipe.

These cookies were born out of a fit of desperation for chocolate. I wanted chocolate and I wanted it to be warm and yummy in cookie form.

Therefore…

Dark Chocolate Oatmeal Puffs

Ingredients

    1/3 Cup quick oats
    1/8 Cup puffed millet
    1 Tbsp flour
    1 egg
    2 Tbsp Fat Free yogurt
    2 Tbsp dark chocolate (chips or chunks)
    1/4 tsp coconut oil
    1 packet truvia (or any pure sugar substitute)
    1/8 tsp baking soda
    1 dash salt
    1 dash cinnamon
    1 splash vanilla
    1 tiny squirt honey

Directions

mix it all together.
Use a cookie scoop to put about 6 cookies on a greased cookie sheet. Cook for about 15 minutes in an oven at 350 degrees.
These don’t have a normal cookie texture due to the absence of butter and the small amount of flour, therefore I call them ‘puffs’. They are light, fluffy, delicious and a perfect end to a crazy day.
 

Number of Servings: 2 (two servings of about three cookies)

I just returned from a whirlwind two day trip to Philadelphia. (City Hall downtown)

I went with the main purpose of reuniting with my British comrade Lu whom I lived with last year and we had a really good time.

I got there Sunday and ended up having to wait a long time for Lu and her friend Anna to show up. (note: cheap flights = leaving at the crack of dawn) On my own that day I visited a museum, I went to Reading Terminal market, and walked about five miles around downtown Philadelphia.

Early Monday morning I woke up to run my long run for half-marathon training. It was on my schedule to run 8 miles this weekend, and even though I usually run on Sundays I thought I would wait until Monday and run in Philly for a change of scenery and for the cooler weather. The run was great! I ran along the Schuylkill River and loved every minute of it!

The next day we woke up early and went on a self guided mural tour in downtown. Philadelphia has the best murals!

We refreshed ourselves with a walk to Maoz, one of my favorite falafel joints in Philadelphia (yes I have more than one favorite!) I got my falafel thrown into a salad.

We walked around our old neighborhood (southwest!) and ate water ice and Philly style pretzels. That night we returned to my favorite Indian buffet in Philadelphia, San Samosa. I think we walked about 8 miles on Monday.

I ended up eating another falafel on Tuesday (so good!) and visiting Trader Joe’s to pick up some staples and treats for my roommates.

Overall the trip was good and I ended up feeling like I stayed pretty healthy. The keys to saying healthy while traveling in my mind are

1)      Eat your own breakfast- I ended up getting instant oatmeal at Trader Joe’s and mixing it with a banana and peanut butter. It was a filling breakfast that was healthy and didn’t break the budget either.

2)      I brought my own snacks- I made sure I had granola bars, nuts, and fruit for whenever I got hungry so I wouldn’t pig out on sugary snacks.

3)      I stayed active- We walked everywhere. I think I calculated by the end of the trip that we walked around 10 miles over the course of three days. This doesn’t even account for the eight miles I put in by the river in Philadelphia.

4)      I ate what I wanted, but I watched my portions- I ate some food that was fried (i.e. falafel) but I didn’t have sides like fries or anything like that. At the Indian buffet I just filled my plate once and made sure I only ate until I was full, though I was tempted to eat more. Listening to your bodies signals really does work.

Overall it was a great trip. I love Philadelphia and I loved getting to see old friends. It will be good to be able to get back into somewhat of a routine this week before I head on anther quick vacation Labor Day weekend.
