I put together some nice crackers last week for a co-workers going away party. I knew I could whip up a hummus quick, but who knew crackers could be just as easy!

Stinking Easy Seeded Crackers

Ingredients

    (inspiration via Nicole Wills at Suite 101)
    2 Cups flour (I used one whole wheat, one white)
    1 tsp. baking powder
    1/2 tsp. salt
    2/3 Cup warm water
    1/3 cup olive oil
    1 tbsp flax seed
    1 tbsp sesame seed
    2 tbsp pumpkin seeds or pepitas

Directions

I preheated the oven to around 400 degrees.

I mixed together all the dry ingredients (flour, baking powder and salt)

I then added the warm water (just from the tap) and the olive oil and mixed it up.

The mixture came together easily.

When it was mixed together pretty good I incorporated the flax, sesame, and pepitas.

I next formed the dough into two equal sized balls.

I sprinkled my countertop with flour and rolled out the dough to around and eighth of an inch.

I used my pizza cutter to cut the crackers into cute little squares.

 

I moved the squares onto a greased cookie sheet and then brushed the tops with olive oil and sprinkled with some additional flax and sesame seed.

I then baked them for around 15 minutes, or until I saw them getting golden brown.

After cooling completely I put them in my Tupperware and I was on my way to the office!

Just a bonus, and because I am ridiculous I will include some pictures of my weekend escapades.
I hung out with these awesome former roommates (minus awesome former roommate #3 Ashley) in Aggieland and the surrounding vicinity. A.k.a College Station and Houston.
They humoured me and took me to the giant aggie ring. I was determined to have a jumping picture of myself here, but lets just say after several attempts, its became clear that it wasn’t going to work.
 
For those of you who know anything about A&M you might not be surprised that there is a huge aggie ring located on campus. When I came back to visit in May, it was my first time to see said aggie ring. I even heard people were getting married under it. Who knew…
I ate pretty healthy this weekend but did allow myself some indulgences…
 
 
 

This was some sort of vegetable salad from a tapas place in Houston (Mi Luna I believe). It was excellent.

I also allowed myself this fro-yo from the cutest frozen yogurt place in the world, Sweet Lola’s. Seriously, it looked like a really cute antique store…but they sold yogurt. Amazing.
