I put together some nice crackers last week for a co-workers going away party. I knew I could whip up a hummus quick, but who knew crackers could be just as easy!
Stinking Easy Seeded Crackers
Ingredients
- (inspiration via Nicole Wills at Suite 101)
2 Cups flour (I used one whole wheat, one white)
1 tsp. baking powder
1/2 tsp. salt
2/3 Cup warm water
1/3 cup olive oil
1 tbsp flax seed
1 tbsp sesame seed
2 tbsp pumpkin seeds or pepitas
Directions
I mixed together all the dry ingredients (flour, baking powder and salt)
I then added the warm water (just from the tap) and the olive oil and mixed it up.
The mixture came together easily.
I sprinkled my countertop with flour and rolled out the dough to around and eighth of an inch.
I used my pizza cutter to cut the crackers into cute little squares.
I moved the squares onto a greased cookie sheet and then brushed the tops with olive oil and sprinkled with some additional flax and sesame seed.
I then baked them for around 15 minutes, or until I saw them getting golden brown.
After cooling completely I put them in my Tupperware and I was on my way to the office!

This was some sort of vegetable salad from a tapas place in Houston (Mi Luna I believe). It was excellent.
I also allowed myself this fro-yo from the cutest frozen yogurt place in the world, Sweet Lola’s. Seriously, it looked like a really cute antique store…but they sold yogurt. Amazing.
